The worst thing you can do when you are emotional upset is eat. That could lead to some unwanted deposits of fat on your body in places that might not look flattering this summer time. With that said, the munchie monster in me is still dying to have some cake. It's been a long and trying week with my big summer diet, and I am in much need of comfort food.
So I picked up this super yummy Angel Lush recipe from
Kraft Foods that is making me not feel too guilty about indulging. After all, it's only 140 calories per serving with a total fat of 1g. It's a little bit high on the sodium and carbs, but I think I'll still live to fight for my diet another day.
1 can (20 oz.) crushed pineapple in juice, undrained
1 pkg. (4-serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
1 cup thawed COOL WHIP LITE Whipped Topping
1 pkg. (10 oz.) round angel food cake
10 fresh strawberries
MIX pineapple with its juice and the dry pudding mix in medium bowl. Gently stir in whipped topping.
CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with 1-1/3 cups of the pudding mixture. Cover with middle cake layer and an additional 1 cup of the remaining pudding mixture. Top with remaining cake layer; spread top of dessert with the remaining pudding mixture.
REFRIGERATE at least 1 hour. Top with strawberries just before serving. Store leftover dessert in refrigerator.
Nutrition Bonus:
Serve up this heavenly dessert for a low-fat cholesterol-free treat. As a bonus, the pineapple teams up with the strawberries to provide an excellent source of vitamin C.
